I grew up in the wild beauty of New Zealand, surrounded by native forests that inspired a lifelong love for nature and craftsmanship. My fascination with copper pot stills began back in 1989, when I started building them as a teenage apprentice engineer in the aerospace industry which led to experimenting with rum and whisky long before The Boutique Distillery was born.
After moving to the UK, I founded The Boutique Distillery in Gloucestershire in 2020, combining my engineering background with a passion for small-batch spirits. Our Eco Distillery, powered by renewable solar energy, reflects our commitment to sustainability. Every copper still is handcrafted from upcycled materials, and our innovative condensers use up to eight times less water than traditional systems.
We work closely with local growers, sourcing most ingredients within 30 miles of the distillery. For our signature touch, the New Zealand feijoa used in our HAKA Exquisitely Refined Dry Cotswold Gin is cultivated right here on site.
